A proper noun is a specific name for a particular person, place or thing. Because they are specific and not generic names, they are always capitalized. The pronoun 'I' is always capitalized because it is the only single letter pronoun. Your example mentioned above will look as follows:
Emily and I went to Paris last July - 'Emily' is the name of a specific person; 'I' is the pronoun; 'Paris' is the name of a specific place; and 'July' is the name of a specific month.
